Bomb Burritos

As a result of my first “follow the recipe” success story, I decided to try another one of Knorr’s “back of the package” recipes……Beefy Broccoli & Cheddar Burritos. This particular recipe called for kidney beans and green onions (garnishing), but since I didn’t have any of these ingredients I decided to use what I did have – black beans and parsley – to save a few bucks and get rid of all these black beans in my pantry.

I crossed my fingers and went to town in hopes that this recipe will become another new “family favorite”. Of course my family is hugeeee (one king, one queen, four princes and one princess- who is too young to enjoy a whole plate of food by herself), so I altered the original recipe* to allow for more servings. As such, my ingredients were:

  • 2 lbs ground beef
  • 2 packages Knorr Rice Sides Cheddar Broccoli
  • 3 1/2 cups water
  • 2 cans Bush’s Best Black Beans, rinsed and drained
  • 6 (10-in) burrito-size flour tortillas
  • 6 (6-in) fajita-size flour tortillas
  • 2 jars Pace Restaurant Style Original Salsa
  • 2 cups shredded cheddar cheese
  • Zatarain’s Parsley Flakes (enough for garnishing)

I used the directions as is on the package, except for the measurement of salsa and cheese which I doubled to make 1 cup each time when they were needed. I didn’t have a 9 x 13 baking dish so I borrowed one from my sister without factoring in that I needed an additional one, so I used what I had – a baking sheet. It worked, but stick to the directions (the 9 x 13 dish makes it easier to cover with aluminum foil without worrying about the cheese sticking) and don’t be like me.

So, I guess you’re wondering how my altered burritos turned out right? Here’s the picture of my finished product (in the correct dish):

Yes, I know it doesn’t look like the picture from the Knorr Recipe, that’s why I said “altered”. This is how it should look if you use the kidney beans and green onions:

I wasn’t sure if one end was meant to be closed since the recipe just said to roll them and place them “seam-side-down”. However, I stuffed (well maybe overstuffed) my burritos until the mixture was almost falling out, so I tried to close up one end as much as possible

Honestly, they were really tasty – you should try it (as is or altered like mine were)- my family loved them!!
